How To Make Italian Peach Cookies – with custard cream filling and liqueur Alchermes are an impressive dessert perfect for summer days, that look and taste like peaches. These Italian Peach Cookies – Pesche Dolci – are known worldwide and are usually made during the holiday season reminding many of us of the beautiful childhood days. Here is a great way to prepare these perfect Italian peach shaped cookies with peach filling and create a memorable treat for your loved ones.

INGREDIENTS:
- For the Cookies:
- 3 eggs at room temperature
- 170 gr sugar
- 100 gr soft butter at room temperature
- 4 tablespoons milk
- 500 gr flour 00
- 1 sachet of baking powder
- For the Custard Cream:
- 3 yolks
- 90 gr sugar
- 60 gr corn starch or potato starch
- 500 ml whole milk
- vanilla seeds to scent
- To Decorate
- 50 ml liqueur Alchermes
- granulated sugar
- leaves to decorate

INSTRUCTIONS:
1 ) Start by preparing the Custard. I used the fast recipe, the one with less yolks. The consistency must be dense. Once ready, pour the cream into a bowl, cover it with plastic wrap and let it cool. You must use Cold.
2 ) Meanwhile prepare the dough for soft cookies. I used the Planetarium but you can use simple whips or do everything by hand.
3 ) Put the eggs and sugar in the bowl of the food processor. Whisk for a couple of minutes until you get a light and foamy mixture.
4 ) Add the soft butter and milk and continue to work. Finally, add the sifted flour together with the yeast (if you use the mixer replace the whisk with hook K). You will get a soft and slightly sticky dough. Pour the dough on the lightly floured pastry board and knead a little to make it less sticky.
5 ) Divide the dough into 25-gram portions. Make balls and then press them like buttons. This trick is essential to make peaches from the Perfect shape! Bake in a STATIC oven preheated to 180 s. for about 15 minutes. Cookies should remain whitish on the surface and slightly amber below.

6 ) Remove from the oven and let cool. With the tip of a sharp knife dig the cookies inside. Pour the Alchermes into a saucer and soak the outside of the biscuits.
7 ) Put the custard in a pastry bag with a smooth nozzle and fill the biscuits. Add 2 halves to form a peach by spilling some cream Roll the fake peach in the granulated sugar.
8 ) Place the alchermes peaches on a saucer and decorate them with leaflets (real or fake). I used tangerine leaves around my house! Keep the sweet peaches in the fridge and Tiratele out half an hour before consuming them.
