Mexican style pinto beans

INGREDIENTS:

  • 1 pound dried pinto beans, rinsed
  • 4 cups water, or as needed
  • 2 (10-ounce) cans of diced tomatoes with green chile peppers (such as RO*TEL®)
  • ½ pound bacon cut into 1/2-inch pieces
  • 1 yellow onion, chopped
  • 1 tablespoon chili powder, or to taste
  • 1 tablespoon ground cumin, or to taste
  • 1 ½ teaspoons garlic powder, or to taste
  • ½ bunch fresh cilantro, chopped
  • Salt to taste

INSTRUCTIONS:

1 ) Place pinto beans into a large pot and pour in enough water to cover by 2 to 3 inches. Let the beans soak overnight.

2 ) The next day, drain the beans, return them to the pot, and pour in fresh water to cover. Add the diced tomatoes, bacon, chopped onion, chili powder, cumin, and garlic powder. Bring the mixture to a boil over high heat.

3 ) Once the mixture is boiling, reduce the heat to low and simmer for about 3 hours. Be sure to check the beans occasionally and add more water if needed.

4 ) After the beans have simmered for 3 hours, stir in the chopped cilantro and add salt to taste. Continue to simmer until the beans are soft, which should take about 1 more hour.

5 ) Once the beans are soft, turn off the heat and let them cool for a few minutes. Then, serve the beans hot with your favorite toppings, such as shredded cheese, sour cream, and chopped fresh tomatoes.
