The kids loved this baked chicken and rice. Easy to make and only one pan to clean. This is one of my regular rotation! It’s made entirely in the oven and it’s so delicious!
INGREDIENTS:
- 1/2 cup of long-grain white rice(uncooked)
- 1/4 cup of hot water (tap is fine)
- 5 Skinless chicken thigh fillets with bone
- 1 chopped onion
- 1/2 cup of chicken broth
- 2 Tbsp olive oil (you can use butter instead)
- 2 large and minced garlic cloves
- For chicken Seasoning:
- Black pepper to taste
- 3/4 tsp salt (to taste)
- 1 tsp of paprika
- 1 tsp of dried thyme
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Optional: Fresh thyme leaves or finely chopped parsley
