EASY CREAMY CUCUMBER SALAD

CREAMY CUCUMBER SALAD

Creamy cucumber salad is the side dish you should be making and bring to your next potluck. This dish is a lighter lower-carb alternative to potato salad that will complement any barbecue. Cucumbers are definitely in season, so this is a great use for those this salad is creamy cool and comforting. And not only that, this salad only has a few ingredients and it’s super easy to prepare.

I’m gonna show you just how quick it is this is a great time to use that mandolin that you have that you might not use very often this way you can get nice thin even slices of cucumber today I’m just gonna use an English cucumber but this will work with any cucumber.

If you don’t have a mandoline slicer, don’t worry you can just then lay slice it with your knife. You still get that comforting creamy flavor from potato salad, but without all those carbs and everybody’s into that next you’re gonna use a thinly sliced sweet onion which is also in season during the summer.

NOTE: This salad tastes best when the dressing is made ahead and chilled for at least one hour and up to 24 hours before serving. Once the salad is assembled, it can be chilled for another 1-2 days before serving if desired.

This is why I had a great flavor to the salad, you can slice this on your mandoline slicer too, or just use a knife. This salad is easy but it does take a minute because this next step is pretty crucial. Next, we just add our cucumber and sweet onion to a colander and add a little bit of salt, which is gonna help draw out all the water, and then Pat it dry later. Getting all the water out beforehand, it’s gonna keep your dressing from getting watery later.

Now, let this sit for about an hour, and you can toss it in between to be sure all that water draws out. Nobody wants watery salad, so Pat your cucumbers and onions on some paper towels while those dry up a little bit, let’s start making the dressing: Just a little bit of sour cream, you can also use Greek yogurt if you want more of that to Zekey flare, a little bit of rice vinegar, fresh dill, chives, and a little more salt. then add your cucumbers and onions and toss, and that’s it.

 

INGREDIENTS:

  • ¾ Cup Mayonnaise
  • ¼ Cup Sour Cream
  • 1 Tablespoon Red or White Wine Vinegar
  • 2 Teaspoons Italian Seasoning
  • 1 teaspoon Olive Oil
  • 2 Cloves Garlic, Minced
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • 1 Pinch Granulated Sugar, About ⅛ teaspoon
  • 3 Large Cucumbers
  • 1 Medium Red Onion

CREAMY CUCUMBER SALAD

INGREDIENTS:

1 ) In a medium bowl whisk together the mayonnaise, sour cream, red or white wine vinegar,

2 ) Italian seasoning, olive oil, garlic, salt, pepper, and sugar.

3 ) For best results, cover and chill the dressing for at least one hour, and up to a full day before making the salad.

4 ) Thinly slice the cucumbers and red onions about ⅛-1/4 inch thick.
Mix the dressing together with the onion and cucumber. Serve immediately, or chill until ready to serve.
