How to make Street Corn at Home: The best Mexican Street Corn is made my smearing piping hot corn on the cob with mayonnaise and dredging it with Queso or Cotija cheese, fresh cilantro(optional), chili powder, lime and plenty of salt and pepper.

The mayonnaise melts right into the corn to take on a whole new flavor and acts as the glue to hold everything together. It’s incredibly tasty, as well as addicting and very messy which somehow makes it all the more enjoyable to eat.

Ingredients:

  • fresh cilantro(optional)
  • 3 ears of corn, hulled
  • 3 wooden skewers
  • ¼ cup melted butter
  • ½ cup mayo
  • 2 cups cotija cheese
  • 3 teaspoons chili powder

Preparation:

1 ) Boil the corn for about 5 minutes.

2 ) Push a skewer through the middle of each ear of corn.

3 ) Drain, then brush them evenly with the melted butter.

4 ) Spread a bit of mayo all over each ear of corn.

5 ) Scoop the cotija cheese generously on the corn, making sure it covers all sides.

6 ) Sprinkle a little bit of the chili powder evenly across the corn.

7 ) Serve!

And that’s it! Isn’t it so easy!? I’m definitely adding this dish to our regular rotation for easy dinners.
