MOZZARELLA ONION RINGS

I’ve never been a big dessert fan, but I’m a real fan of anything salty and fried. Although I do not eat this type of food very often, when I do, I tend to go out. When I came across a recipe for mozzarella onion rings, I thought it was too good to be true. Two of the best but bad food for you combined into one?

INGREDIENTS:

  • 3-4 slices of mozzarella cheese
  • 2 cups flour
  • 5 eggs
  • 2 large white onions
  • 2 cups breadcrumbs
  • Frying oil
  • Marinara sauce

INSTRUCTIONS:

1 ) Peel and cut the onions into 0.5-inch rings. Separate the rings.

2 ) Cut the mozzarella into four equal slices.

3 ) Place a smaller onion ring in the center of a larger ring.

4 ) Fill the space between the slices with strips of mozzarella. Repeat with the remaining onion rings and freeze for 1 hour.

5 ) Place flour, eggs, and breadcrumbs in three separate bowls.

6 ) Dip each prepared ring in the flour, then the egg, then the breadcrumbs, then again in the egg, and one last time in the breadcrumbs. Repeat with the remaining onion rings.

7 ) Heat the oil in a saucepan over high heat.

8 ) Fry the slices until golden brown, taking care not to fry them too long, as the cheese may ooze completely.

9 ) Drain on paper towels, then serve with marinara!
