Ingredients

  • Fresh Pineapple: 8 ounces (230g)
  • Sugar Syrup: 1 cup
  • Water: 8 ounces (250ml)
  • Sugar: 1 cup (7 ounces / 200g)
  • Lemon Juice: ½ cup (4 ounces / 125ml)
  • Lime Juice: ¼ cup (2 ounces / 60ml)
  • Water: 5 cups (1.18L)
  • Ice Cubes

Step 1: Prepare the Pineapple

  1. Grill the Pineapple:
    • We’re not just using pineapple juice. Take fresh pineapple, slice it into about quarter-inch slices, and grill it for a deeper flavor. You can use your grill or the broiler in your oven.
    • If using the broiler, place the slices on a baking sheet and broil them for about 7 minutes on each side until they get a nice char.
    • Set the grilled pineapple slices aside to cool.

Step 2: Make the Simple Syrup

  1. Prepare the Simple Syrup:
    • Pour one cup of water into a pot and add one cup of sugar. Turn the heat on and stir until the sugar is completely dissolved.
    • Once the sugar has melted and the water is boiled, turn the heat off and set the simple syrup aside to cool.
    • Note: Making a larger quantity of simple syrup and refrigerating it is a good idea if you plan to make a lot of drinks.
