Pineapple Lemonade Hot Breaker

Ingredients

  • Fresh Pineapple: 8 ounces (230g)
  • Sugar Syrup: 1 cup
  • Water: 8 ounces (250ml)
  • Sugar: 1 cup (7 ounces / 200g)
  • Lemon Juice: ½ cup (4 ounces / 125ml)
  • Lime Juice: ¼ cup (2 ounces / 60ml)
  • Water: 5 cups (1.18L)
  • Ice Cubes

Instructions

Step 1: Prepare the Pineapple

  1. Grill the Pineapple:
    • We’re not just using pineapple juice. Take fresh pineapple, slice it into about quarter-inch slices, and grill it for a deeper flavor. You can use your grill or the broiler in your oven.
    • If using the broiler, place the slices on a baking sheet and broil them for about 7 minutes on each side until they get a nice char.
    • Set the grilled pineapple slices aside to cool.

Step 2: Make the Simple Syrup

  1. Prepare the Simple Syrup:
    • Pour one cup of water into a pot and add one cup of sugar. Turn the heat on and stir until the sugar is completely dissolved.
    • Once the sugar has melted and the water is boiled, turn the heat off and set the simple syrup aside to cool.
    • Note: Making a larger quantity of simple syrup and refrigerating it is a good idea if you plan to make a lot of drinks.

Step 3: Juice the Citrus

  1. Juice the Limes and Lemons:
    • Juice the limes and lemons and set the juice aside.

Step 4: Blend the Pineapple

  1. Blend the Pineapple:
    • Take the charred pineapple rings (slices), cut them up, and put them into your blender. Save a small piece or two to garnish your glasses if desired.
    • Blend until well blended, then strain the juice using a fine strainer.

Step 5: Mix the Lemonade

  1. Combine the Ingredients:
    • Pour the strained pineapple juice, fresh lemon juice, and a quarter cup of fresh lime juice into a pitcher.
    • Add half of the simple syrup and dilute the mixture with 4 cups of cold water.
    • Stir well, taste, and add more sugar syrup if needed. The sweetness will depend on how sweet your pineapple is and how sour your lemons and limes are.

Step 6: Serve

  1. Serve the Lemonade:
    • Chill the lemonade and serve it over ice for the best taste.
    • Garnish with pineapple pieces if desired.
